Guillermo “Memo” Vaca

As Butterfield’s Director of Dining Services, Memo Vaca works hard to ensure that the Village always has a chef-prepared menu with healthy options that don’t sacrifice flavor. Memo joined Butterfield in 2018, overseeing food service operations and providing hands-on leadership in cooking, nutrition, food safety and departmental administration.

Born and raised in Compton, Calif., Memo has traveled the country as a chef and mentored with several talented chefs in the San Francisco area. He managed fine dining restaurants, including Stonehouse at Chaffee Crossing, and worked in casinos for a decade as well.

Memo loves that his job combines culinary execution along with the joy of building a great culinary team. He takes pride in bringing happiness to residents’ lives each day. In his spare time, he enjoys entering cooking competitions, kayaking and spending time with his daughter, Raelee Shae, who is the light of his life.
